This Mango Sticky Rice is a classic Thai dessert that’s both comforting and refreshing. Sweet sticky rice is infused with coconut milk and topped with slices of ripe, juicy mango. It’s incredibly easy to make and a guaranteed crowd-pleaser!

1 cup glutinous rice (sweet rice)

2 ripe mangoes, peeled and sliced

Instructions

Rinse Rice: Rinse the glutinous rice under cold water until the water runs clear.

Soak Rice: Soak the rinsed rice in water for at least 2 hours, or preferably overnight.

Cook Rice: Drain the rice and place it in a saucepan. Add 1 1/4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the water is absorbed. Alternatively, steam the rice in a steamer for 25-30 minutes.

Prepare Coconut Sauce: While the rice is cooking, prepare the coconut sauce. In a saucepan, combine 1 can of coconut milk, sugar, and salt. Heat over medium heat, stirring constantly, until the sugar is dissolved. Do not boil.

Combine Rice and Sauce: Once the rice is cooked, gently stir in about 3/4 of the coconut sauce, reserving the rest for serving. Let the rice absorb the sauce for about 10 minutes.

Serve: Serve the sticky rice warm, topped with sliced mangoes, the remaining coconut sauce, and toasted sesame seeds (if using).
Notes
Variations: Add a pinch of cardamom or a few drops of pandan extract to the coconut sauce for a different flavor. You can also use different varieties of mangoes.
Tips: Soaking the glutinous rice is crucial for achieving the right texture. Use freshly cooked rice for the best results. Don’t overcook the rice, as it will become mushy. The sauce should be thick and creamy; it should coat the rice.
