    • 1/4 cup (50g) granulated sugar

    • 1/4 cup (85g) honey

    • 1 large egg

    • 1 teaspoon vanilla extract

    • 1/2 teaspoon peppermint extract

  • Chocolate Coating:

    • 8 ounces (225g) dark chocolate (70% cocoa or higher), chopped

    • 1/2 teaspoon peppermint extract


Instructions

  1. Make the Cookies: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  2. In a large bowl, cream together the butter, sugar, and honey until light and fluffy.

  3. Beat in the egg, vanilla extract, and peppermint extract until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  5. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  7. Roll out the dough on a lightly floured surface to about 1/8-inch thickness. Use a 2-inch round cookie cutter to cut out cookies.

  8. Place cookies on the prepared baking sheet.
