Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add Potatoes and Tomatoes: Add the cubed potatoes and diced tomatoes (with their juice) to the pot. Stir to combine.

Pour in Broth and Spices: Pour in the vegetable broth and add the dried dill, salt, and pepper. Stir well to combine.

Simmer: Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the potatoes are tender.

Add Peas and Herbs: Stir in the peas (fresh or frozen), fresh parsley, and fresh mint. Cook for another 5-10 minutes, or until the peas are heated through and tender.

Finish with Lemon: Stir in the fresh lemon juice. Taste and adjust seasoning as needed.

Notes
Variations: For a richer flavor, add a bay leaf during the simmering process and remove before serving. Other vegetables like carrots, zucchini, or green beans can be added. Some versions also include a pinch of sugar to enhance the sweetness of the tomatoes.
Tips: Use high-quality olive oil for the best flavor. If using frozen peas, add them during the last 5 minutes of cooking to prevent them from becoming mushy. Don’t overcook the potatoes, as they will fall apart.
